For someone a rice cake sandwich can be a snack.For me it’s a meal. It is really filling. This post will not have a recipe. All you have to do is to arrange your favorite things on top of a rice cake.
If I rank these three ‘sandwiches’ by taste, the number one winner would be garlic-flavored spread cheese (I used 2 Tbsp of Boursin) and a slice of all-natural smoked salmon. Eating that rice cake temporarily lifts you up to the paradise and then you get back to Earth, full and happy. Second place belongs to cucumbers and tzatziki rice cake. Cucumbers give this dish the freshness of summer. Garlic-flavor of tzatziki give it a nice boost.
Finally, third place goes to grilled cheese avocado sandwich. I will tell you the secret – don’t grill avocado with cheese as I mistakenly did. Grill marble cheddar cheese in the microwave first, around 10-20 seconds depending on the power of your microwave. Top up with cold sliced avocado slices. And you’re all set. Make 3 rice cake sandwiched and see the result – three happier people on the planet, filled with only 7 grams of carbs.
