Banana Applesauce Muffins

Serves: 12 muffins
Ingredients
  • 2 cups gluten-free flour (regular is ok too)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 ripe bananas, mashed
  • 1 egg
  • 1 cup unsweetened apple sauce
  • ½ cup granulated sugar
  • ¼ cup vegetable oil
Instructions
  1. Preheat oven to 400 F (200 C). Fill muffin pan with cup liners.
  2. In a large bowl, combine flour, baking powder, baking soda and salt.
  3. Gently stir these dry ingredients.
  4. In a medium bowl, combine bananas, apple sauce, egg, sugar and oil.
  5. Add this liquid mixture into the flour mixture and keep stirring until the mixture is uniform.
  6. Divide batter evenly among 12 muffin cups.
  7. Bake in preheated oven for 20 minutes.
  8. Let cool for 10 additional minutes before serving.
