Made this today for brunch, continuing writing my minimum-ingredients meals series. This one is the second post.
This leaks and mushroom dish took me around 5 mins to make.
Serve it over any side dish you have handy.
It doesn’t really need a recipe.
Ingredients:
1 pack of mushrooms, washed and chopped.
1 stalk of leeks, washed and chopped.
1 Tbsp of curry paste (totally optional, use garlic powder or nothing at all).
Salt to taste and cooking oil (I used grapeseed oil).
Instructions:
Heat upĀ 3 Tbsp of cooking oil in a frying pan. When hot, fry leeks with a pinch of salt until golden and translucent. Then scoop the leeks on one side, opening up a space for mushrooms. Sprinkle a bit of salt over the mushrooms, let them release liquids, keep stirring mushrooms (on their side of the pan). Stir leeks on their part of the border occasionally. Once mushrooms liquids are nearly gone (evaporated), mix up leeks and mushrooms and serve hot. All together, this meal will take around 5 min to cook. Here I exclude time for prepping.
