Ingredients
- Quinoa, 200 grams
- 4 Tbsp sesame oil, divided
- 3 eggs, beaten
- 4 garlic cloves, minced
- 1 cup frozen peas and corn mixture
- 1 bell pepper, diced
- salt to taste
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp hoisin sauce
- 1 green onion,thinly sliced
Instructions
- Cook quinoa as per the package instructions, set aside.
- Heat 2 Tbsp of sesame oil in a wok or in an extra-large non-stick frying pan over medium-high.
- Add eggs, stirring often, until set, 1 to 2 min. Transfer eggs to a small bowl.
- Add remaining oil to pan and cook garlic stirring fast for 1 minute. Add peas, corn, pepper and a pinch of salt. Cook, stirring often, until the pepper is tender, about 5 minutes.
- Stir in cooked quinoa, soy sauce, hoisin sause, and eggs.
- Sprinkle with green onion and serve hot.
