Vegan Quinoa Fried Rice

This is an amazing substitute for the popular dinner staple dish. Quinoa is a complete protein, high in minerals and fiber. It’s very easy to cook and is a great side dish. This Asian-inspired ‘fried rice’ style meal with quinoa will satisfy your taste buds and leave you feeling full for hours.

 

Quinoa Fried Rice

Total time: 40 mins
Serves: 4
Ingredients
  • Quinoa, 200 grams
  • 4 Tbsp sesame oil, divided
  • 3 eggs, beaten
  • 4 garlic cloves, minced
  • 1 cup frozen peas and corn mixture
  • 1 bell pepper, diced
  • salt to taste
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp hoisin sauce
  • 1 green onion,thinly sliced
Instructions
  1. Cook quinoa as per the package instructions, set aside.
  2. Heat 2 Tbsp of sesame oil in a wok or in an extra-large non-stick frying pan over medium-high.
  3. Add eggs, stirring often, until set, 1 to 2 min. Transfer eggs to a small bowl.
  4. Add remaining oil to pan and cook garlic stirring fast for 1 minute. Add peas, corn, pepper and a pinch of salt. Cook, stirring often, until the pepper is tender, about 5 minutes.
  5. Stir in cooked quinoa, soy sauce, hoisin sause, and eggs.
  6. Sprinkle with green onion and serve hot.
